My Favorite Chocolate Chip Cookie Recipe





I am back to the kitchen tonight to bake for Thursday nights dinner service at the Mission. We try to bake each time our family volunteers to serve dinner. We know how much the men look forward to the home baked goods. They thank us and thank us for being there. It is very humbling. I have started my baking tonight with my favorite Chocolate Chip Cookie recipe. These cookies are big, fat and chewy just like you would find in specialty shops. My family loves them. I am working on a double batch before I move on to something else. The house smells mouth watering good!

Chewy Chocolate Chip Cookies

2 cups all-purpose flour
1/2 tbsp. baking sode
1/2 tsp. salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tbsp vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

Preheat the over to 325 degrees. Grease cookie sheets or line with parchment paper. Sift together the flour, baking sode and salt; set aside

In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in vanilla, egg and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand.
Drop cookie dough 1/4 cup at a time unto the prepared cookie sheets. Cookies need to be at least 3 inches apart.

Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheet for a few minutes before transferring to wire racks to cool completely.
